Le Marche is a hilly region, it is true, but they also have a very important coastal area, that for centuries has produced a very rich culinary tradition. A top rank dish from this tradition are the tagliolini noodles (or tonnarelli) with seafood: a sauce of shellfish with the intense “sea aroma”, that involves all five senses all the tasting time.
