The Gastreghini bakery has joined enthusiastically from the otuset in the project Qm (Quality Guaranteed by Marche Region).

For many years he had indeed married the organic production standards, by investing, as first in the Marche Region, in the concepts of short and traced chains. Our wheat and barley producers are exclusively local and organic or Qm certified.

The Regional Traceability System (Si.Tra.)  collects daily data on the production of our bread, from the origin of the ingredients to the cooking duration.

Several years ago we decided to produce a bread with a 40% of barley flour in the dough. In fact the barley flour, thanks to its beta-glucans,  is much more digestible than the normal type 0 flour. This is therefore a bread suitable for those who must follow special diets, or simply want to keep fit.
