The Regional Traceability System (Si.Tra.)  collects daily data on the production of our bread, from the origin of the ingredients to the cooking duration.

Our bread is the typical central Italy filetta without salt: a tradition stemming from poor economic conditions of our ancestors, to which salt was a luxury item.

A very simple bread, good base for tasty bruschetta with products of our land.
